Blackberry and cherry aromas are paired with hints of cassis and dark chocolate. Notes of mint, caramel and liquorice give the palate a velvety, smooth long finish.
Liquidity’s Merlot plantings from 1996 and 2005 have been cane pruned and then shoot and fruit thinned to produce 2 short tons per acre. 2012 vintage was overall cool with a long warm fall season, which made it ideal for the ripening process of the grapes.
The grapes were destemmed and crushed to one-ton fermenters, 1/3 of them left to wild ferment while 2/3 were innoculated. There was skin contact for 14 days before being pressed off and settled for 24 hours post pressing before going to barrel for 14 months in French oak (20% new). The wine was racked twice before bottling with minimal filtration.
