Winemaker Notes
Chardonnay, exclusively from our Allendale Vineyard, was harvested in late September and whole cluster pressed. The juice was racked to mostly neutral (14% new) French oak barrels. Predominantly native barrel fermentations were carried out with regular lees stirring, which continued through partial malolactic fermentation. The wine was barrel aged for 11 months before blending and bottling in August.
Food Pairing Notes
This Chardonnay would complement shellfish with garlic butter, grilled chicken on creamy pasta, herb-crusted fish, or semi-soft cheeses.
